Sweet Grass Pimento Cheese

1 Cup White Cheddar, shredded
1 Cup Yellow Cheddar, shredded
1/2 Red Bell Pepper, roasted, peeled, seeded and diced
1/2 Green Bell Pepper, roasted, peeled, seeded and diced
1/2 Cup Cooked Bacon, chopped
1/4 Cup Parsley, chopped
1/2 Cup Sour Cream
1/4 Cup Mayonnaise
1 teaspoon Tabasco
Add Salt & Pepper to taste

Fold together gently and don't press or pack into too small of a container.

Next Door Nacho Cheese Sauce

To start cook a light brown roux:
2oz Butter
2oz Flour
Melt butter in pan and add flower until mixed

Cook ingredients over Double Boiler:
1 Cup Whole Milk
2oz Easy Melt Cheese, shredded
Melt until smooth.

Pepper Purée,
1/4 Cup Peppers & Onions,
1 Garlic Cloves, sautéed
1oz Pickled Jalapeños
2oz Water

Add melted cheese and Pepper Purée to brown roux and stir.

Next Door Chili Sauce

1 32 oz Can of Tomato Filets
1 Tablespoon Valentino Hot Sauce
Simmer and reduce by half

Pepper Purée,
1 Cup Peppers & Onions,
1 Garlic Cloves, sautéed
2 oz Pickled Jalapeños
1/2 of the tomato reduction

Place purée back in the pot and add 1 gallon of Chicken Stock. Reduce to sauce consistency.

Add Seasoning
2 oz Butter
1 Tablespoon Garlic, granulated
1 Tablespoon Onion Powder
1 teaspoon Cumin, toasted & ground
2 teaspoon Chili Powder
1 teaspoon Crazy Good Green Chili Powder
